Application area

Margarine, spread and other foods containing fat with oil separation, liquid margarine, and margarine spread which are not transported under cool conditions.

 

Potential benefits

1. Prevents oil separation without significant influence on the meltdown properties
2. Provides stability and lower viscosity in liquid margarine
3. Improves the water-binding properties so that it is not necessary to use extra amounts of monoglyceride in standard margarine
4. Stabilizes crystal lattice at ambient temperature and consequently cool transport is not required

Prevention of oil separation         0.5-2.0%
Stabilization of liquid margarine         1-2%
