Yichuang Compound Cake Emulsifier(Cake Gel) is made from Sorbitol syrup, Mono diglycerides of fatty acids, Sorbitan monostearate, Polyoxyethylene(20) Sorbitan monostearate, Popylene glycol, Popylene glycol esters of fatty acid, and water. It is used as an emulsifier and stabilizer in Sponge Cake, Swiss Roll, and Cake production. It is also used for adding volume to sponge cake roll, cake dough, and ice cream.
